Heat oil in large saucepan set over medium heat. Cook onion, garlic and salt for 3 to 5 minutes or until slightly softened. Stir in rice. Cook for 1 to 2 minutes or until well coated.
Stir in vegetable broth and salsa verde; bring to boil. Reduce heat to low. Cover and cook for 15 to 20 minutes or until most of the liquid is absorbed.
Remove from heat. Cover and let stand for 5 minutes. Fluff with fork; stir in cilantro and parsley.
Alternatively, for salsa roja rice, use tomato salsa instead of salsa verde.

Start with a base of Non-GMO Project Verified Carolina® White Rice sautéed in chopped onions, garlic and a little salt. Then use homemade or your favorite store-bought vegetable broth and salsa verde and simmer so the rice grains absorb all of those delicious flavors in place of cooking them in traditional plain water.
To finish off your delicious dish, we suggest you top with fresh cilantro and parsley or sliced avocado, feta cheese, tomatoes and sriracha sauce for some heat. Make this rice dish your own and top it or serve it how you like best.
