This simple salsa verde rice recipe hits the spot for the perfect side dish, burrito filling or rice bowl base.
Step 1
Heat oil in large saucepan set over medium heat. Cook onion, garlic and salt for 3 to 5 minutes or until slightly softened. Stir in rice. Cook for 1 to 2 minutes or until well coated.
Step 2
Stir in vegetable broth and salsa verde; bring to boil. Reduce heat to low. Cover and cook for 15 to 20 minutes or until most of the liquid is absorbed.
Step 3
Remove from heat. Cover and let stand for 5 minutes. Fluff with fork; stir in cilantro and parsley.
Alternatively, for salsa roja rice, use tomato salsa instead of salsa verde.
