Sushi meets burrito in this easy and delicious handheld sushi recipe featuring crabmeat, avocado, and cucumber.
Step 1
Cook rice according to package directions. Stir in rice wine vinegar, lime juice, sugar and salt until well coated. Let cool completely.
Step 2
Fuse 2 sheets of nori by placing them side by side with rough sides facing up. Wet about 1 inch along one of the edges, pressing to adhere sheets together.
Step 3
Starting 1 inch from one short side of fused nori sheets, spread 1 cup of sushi rice mixture over nori sheets. Lay cucumbers, carrots, avocados, crab and cilantro down along center of the rice.
Step 4
Roll one edge over filling as tightly as possible; continue rolling to form roll. Repeat to make 6 rolls.
Step 5
Whisk together mayonnaise and chipotle. Serve sushi burritos with chipotle mayo for dipping.
Crab sticks can also be used for this recipe.
Alternatively, serve with red or green salsa for dipping.
For make-ahead, wrap each roll in paper towel, then wrap in foil or plastic wrap.
