A colorful salad layered with whole gain rice, mushrroms, fresh chives, reduced-fat italian dressing, green onions, tomatoes, chopped, red bell peppers, reduced fat Provolone (or cheddar cheese) and frozen green peas.

  • In non-stick skillet, heat oil and add mushrooms. sauté stirring frequently until mushrooms are browned and all liquid has evaporated.

  • Combine all ingredients in a large bowl. Serve.
