This rich and creamy Gluten Free version of your favorite stovetop mac and cheese is made with Carolina® Jasmine Rice naturally flavored with garlic and olive oil.
Melt butter in skillet set over medium heat; stir in rice, cream cheese and milk. Cook, stirring often, for 5 to 8 minutes or until creamy and rice is heated through.
Remove from heat; stir in Cheddar. Mix for about 1 minute or until cheese is melted.
Sprinkle with green onions before serving.
If you want to give this recipe a slightly more sophisticated touch, sub in either Gouda or Gruyère for the Cheddar cheese.
If you’ve never tried your hand at making your own homemade cheese sauce for mac and cheese, you’re missing out! Now is your chance with this Gluten Free version made with ready to serve naturally flavored rice.
The difference between this dish and the traditional version is that the rice is added into the butter along with the cream cheese and milk to cook down. Once that is sufficiently warm, added in the shredded cheese and stir with a whisk until it is rich and creamy. Simple and delicious.
For an added crunchy layer on top, heat butter and breadcrumbs together and sprinkle over the top of your dish. In an oven-safe dish, bake on broil until the breadcrumbs are golden on top.
Use it as a side dish for your next meal or get together. Bring the flavors of your childhood back and toss in sliced hot dogs, Italian sausage or chopped bacon. Once the flavors hit your taste buds, you’ll be yearning for the days of a grilled cheese sandwich and a bowl of tomato rice soup. Take a moment to sit back and remember the good old days with a nice bowl of Rice Mac and Cheese.
