Paella Salad

A refreshing summer time meal, full of chicken and shrimp, salad greens, green olives and avacado slices. This recipe appeared on the Carolina® Rice package in the mid-1990’s.

  • In a large skillet, cook chicken and shrimp in oil until tender; remove and set aside.

  • Add onion and garlic; cook onion until tender.

  • Add uncooked rice, stir until opaque. Add saffron, broth and lemon juice. Cover and simmer 20-minutes, until rice is tender.

  • Add chicken and shrimp. Chill several hours. Serve on salad greens; garnish with olives, avocado, and tomato.
