Step 1
In a large skillet, cook chicken and shrimp in oil until tender; remove and set aside.
Step 2
Add onion and garlic; cook onion until tender.
Step 3
Add uncooked rice, stir until opaque. Add saffron, broth and lemon juice. Cover and simmer 20-minutes, until rice is tender.
Step 4
Add chicken and shrimp. Chill several hours. Serve on salad greens; garnish with olives, avocado, and tomato.
