This savory one-skillet dinner is made with Mexican chorizo sausage and Carolina® Brown Rice simmered in broth and a blend of onion, pepper, garlic and spices.
Step 1
Heat oil in large high-sided skillet or saucepan set over medium heat; cook chorizo for 3 to 5 minutes or until starting to brown. Stir in onion, red pepper, green pepper and garlic; cook for 3 to 5 minutes or until slightly softened.
Step 2
Stir in rice, chili powder, smoked paprika, oregano, salt and pepper; cook for 2 to 3 minutes or until well coated. Stir in broth; bring to boil. Reduce heat to medium-low; cover and cook for 20 minutes or until rice is tender and most of the liquid is absorbed.
Step 3
Let stand for 10 minutes and fluff with a fork. Stir in lime juice and cilantro. Serve with a drizzle of sour cream.

–Do not skip step 3, although your kitchen might be filled with delicious aromas, it’s important to let your skillet sit for at least 5-10 minutes. Why? It gives the ingredients time to cool and blend together without the heat and ultimately enhances the overall flavor of your dish.
-Although optional, by adding the cilantro, lime and sour cream the skillet has an additional level of freshness to the warm rice.
