In a large pot combine 8 cups water, rice, lentils and salt, if desired. Bring water to a boil. Boil uncovered 30 minutes. Drain.
In a large skillet over medium heat, cook chorizo according to package directions. Drain any excess fat.
Add onions, carrots and celery and sauté until vegetables are crisp-tender, about 5 minutes. Fold in cooked rice and lentils. Serve garnished with cilantro.
