This refreshing Mediterranean rice bowl is made with fresh vegetables like cucumber, tomatoes, celery, arugula with tuna and a premium blend of Carolina® Jasmine Rice with Red & Wild Rice.
Cook rice according to package directions. Let cool completely.
Toss together cucumbers, tomatoes, olives, red onion, oil, vinegar, salt and pepper; set aside. Toss tuna with hummus and celery; set aside.
Toss rice with arugula; divide among 6 bowls. Top with cucumber and tomato salad, and tuna mixture. Serve with lemon wedges.
This recipe is great for using up any leftover turkey or chicken from a previous dinner or holiday meal! Swap in chicken or turkey for canned tuna.
For a vegetarian option, simply leave out tuna.
