With both fresh minced ginger and pickled ginger, this pork and vegetable fried rice is bursting with bright flavor.
Step 1
Prepare rice according to package directions; cool completely and chill.
Step 2
Whisk together hoisin sauce, soy sauce, rice wine vinegar, sesame oil, and brown sugar; set aside.
Step 3
Heat oil in large wok or 12-inch skillet set over medium-high heat. Season pork with salt and pepper and stir-fry for 2 to 3 minutes or until pork begins to brown; transfer to plate.
Step 4
Stir in mushrooms, bok choy, onion, ginger and garlic. Cook, stirring for 2 to 3 minutes or until vegetables are tender crisp.
Step 5
Stir in rice and cook, stirring for 2 to 3 minutes or until well coated. Stir in sauce; bring to a boil. Stir in peas and cook for 2 to 3 minutes or until rice is hot, pork is cooked through and veggies are just tender. Step 6 Sprinkle with green onions and pickled ginger.
Tips
Substitute pork with tofu. To thinly slice pork – place meat on a clean plate and freeze for 30 minutes. You will be able to cut the meat into very thin slices, perfect for stir-fry recipes. For best results, use completely cooled rice.
