Make your own hearty burritos using sliced turkey and homemade cilantro lime rice topped with pico de gallo!
In a bowl, add tomatoes, 1/2 cup white onion, 1 tablespoon cilantro, chile, lime juice, and 1/2 teaspoon salt. Mix and set aside.
Heat olive oil in a large skillet over medium heat. Add rice and sauté until it is golden, about 3-5 minutes remaining. Add white onion, garlic and cilantro. Sauté for 1 minute. Add chicken broth and bring to a boil. Cover, reduce heat to low and cook 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Fluff with a fork.
Place 1/2 cup cooked rice and ½ cup turkey down the center of a warmed tortilla. Fold the tortilla sides inwards, then fold top and bottom sides holding each fold as you roll into a tight wrap. Repeat for all burritos. Serve with pico de gallo on the side.

1– Warm your round 10-inch tortilla (in the microwave or in a skillet) and put on a plate.
2– Pour ½ cup cooked cilantro lime rice and ½ cup cooked turkey down the center.
3– Fold the tortilla sides first inwards, then fold the top and bottom and hold each side as you roll it tight!
4– Top with pico de gallo, guacamole, melted cheese or whatever you choose and enjoy!
