Take your taste buds on a trip to Tuscany to enjoy this hearty and warm rice and bean soup with Italian sausage. Carolina® long-grain White Rice with great northern beans, Italian sausage and diced tomatoes cooked in chicken broth seasoned with oregano, salt and pepper.
Step 1
Brown the Italian sausage in a 4 quart saucepan over medium-high heat, about 6 minutes. Drain fat. Stir in broth, tomatoes, salt, pepper and oregano; bring to a boil. Stir in rice.
Step 2
Cover and simmer for 25 minutes, or until the rice is tender.
Step 3
During the last 10 minutes of simmering, stir in the pre-cooked beans.

Start this dish off with great flavors, brown the Italian sausage in a sausage pan over heat and allow it to cook off any of the grease it lets off, when it’s done cooking drain any excess fat. Add in the chicken broth, tomatoes, salt, pepper and oregano and let those flavors simmer together to create a delicious base for the soup. Once that is ready add in the white rice to cook and absorb all of the combined savory flavors. Add in the beans and you’re set. Serve with a crispy bread loaf or toast.
However, for when soup season strikes, make sure you jot down a few more necessary dishes like tortilla rice soup, broccoli and cheese soup or good old homemade chicken and rice soup.
Make this dish even tastier by using freshly diced tomatoes and/or homemade chicken broth. If you want to prepare a vegetarian version, simply omit the Italian sausage and add more beans while also cooking in vegetable broth rather than chicken broth.
Swap out white rice for Carolina® 100% whole grain brown rice to give this dish an even heartier taste. Just add a few more minutes onto the cook time to reach desired consistency.
