To begin your chocolate rice pudding, you first have to create a nice and creamy chocolate base by melting the chocolate in with the condensed milk over low heat. It is important that you use a low heat and continue stirring so this does not burn on the bottom of the pan. Next, add the butter to give it a silky shimmer and whisk in milk, eggs and rice. These last ingredients will help to keep your rice pudding more creamy and solid rather than soupy. Carolina® Short Grain Rice is perfect for a more compact texture because when cooked, the starch released helps to keep the rice closer like sticky rice.
When serving your rice pudding, get creative with the presentation! Use fancy plastic dessert cups from your local dollar store or break out the glass cups or bowls you’ve been saving for a nice occasion. Treat yourself to a dessert you deserve!
Make sure to top with your favorite store bought whipped cream or try your hand at making a homemade version. You can even add a cherry on top of your chocolate shavings, if desired and make sure to save a little cream to add on top of your next pumpkin spice latte rice pudding.
