This tasty twist on classic fish tacos uses an Air Fryer to create a convenient and delicious meal. Tender fish fillets are coated in a crispy outer shell, drizzled with a zesty sauce and served over a hearty bed of Carolina® Whole Grain Brown Rice or white rice.
Step 1
Cook rice according to package directions.
Step 2
Meanwhile, stir together sour cream, mayonnaise, lime zest, lime juice, cumin, and 1/2 tsp each salt and pepper.
Step 3
Cut fish fillets into 2-inch pieces. In a shallow bowl, stir together cornmeal, flour, chili powder and remaining salt and pepper. In a separate bowl, beat egg whites until frothy.
Step 4
Dip fish first in egg whites, then dredge in cornmeal mixture until coated. Place on parchment paper-lined tray.
Step 5
Preheat air fryer according to manufacturer’s instructions.
Step 6
In 3 batches, place breaded fish in air fryer basket. Drizzle each batch with 1 tbsp oil. Air-fry at 400°F, turning once, for 4 to 6 minutes or until golden brown and cooked through.
Step 7
Divide brown rice among 6 bowls. Top with cabbage, pico de gallo, avocado and fish.
For a loaded rice bowl, add corn, radishes and beans.
