Street corn is a fun and delicious dish to serve as an entree or as a side. The grilled corn will remind you of those great burritos served in food trucks at baseball games or summertime county fairs. Find out how easy authentic street corn is to make at home by following this recipe.
Choose corn from the store or your local supplier that is fresh and ripe. You can either remove the kernels from the corn or grill your corn with the kernels still intact to the cob. Some would say it is easier to leave the kernels on the cob and toss the whole thing on the grill after a light coating of butter. Once the kernels are roasted, give it a few minutes to cool down, cut them off and mix them to the rest of the sour cream salsa mixture.
Corn on its own goes great in a burrito or taco, but when combined with Carolina® White Rice, it makes an especially nice filling. Add to a tortilla with some beans, chopped jalapeños, and some guacamole.
Make your burritos as authentic as possible by using the biggest size tortilla, and filling and tucking with all the ingredients so that nothing falls out. You could also serve this street style mixture of corn and rice as a side with our Grilled Chicken Tacos – use the same grill to prepare both recipes!
