Thai cuisine is known for its sweet and spicy but at the same time salty and tangy plates – that’s right, all in one! This recipe is no exception and with our aromatic Carolina® Ready to Heat Jasmine Rice, it can be served as a side dish or a main dish.
Jasmine rice is a long-grain variety of fragrant rice found in the gastronomy of most Southeastern Asian countries. From stir-fries to desserts and, of course, wholesome soups. These grains make the perfect pairing to keep you feeling satisfied even when having soup for lunch.
What we love about this Pumpkin Coconut Soup is that even after your first spoonful, your day might feel just a bit better. The combination of flavors is as complex as it is satisfying, for a delicious Thai soup that tastes even better than your favorite restaurant version— our secret is to add in a dollop of maple syrup.
If you’re a beginner cooking Thai cuisine, make sure to buy extra ingredients so you can use them in this soup and save some for your next spicy obsession – Curry Chicken Burritos! They’re also made with curry powder, coconut milk, and Carolina® Jasmine Rice.
For a vegetarian version of the recipe, sub in veggie stock for the chicken broth – if it’s homemade, better!
Make this soup even more filling by serving it alongside toasted bread slices or shredded chicken on the side. Our favorite vegetarian option is marinated tofu.
For an extra spicy taste, try adding a few teaspoons of turmeric powder or ginger. Adding red curry paste instead of curry powder will turn-up the temperature too.
