Moroccan Style Basmati Rice with Chicken
Ingredients
- 1 cup Carolina® Basmati Rice
- 1 tbsp vegetable oil
- 1 yellow onion, thinly sliced
- 1 tbsp garlic, minced
- 1 tbsp fresh ginger root, grated
- ½ lb. chicken tenders, diced
- ½ tsp. all-spice
- saffron threads or ¼ tsp turmeric (optional)
- 2 cups chicken Broth
- 1 tbsp fresh lime juice
- ¼ cup fresh cilantro leaves, chopped
Instructions
This one-pot chicken and rice dish flavored with Moroccan seasonings like ginger root, allspice and turmeric is a great way to bring new and interesting flavors to your table tonight! The texture of the long-grain and aromatic flavored Carolina® Basmati Rice complements the chicken and spices perfectly.
Step 1
In a large skillet, heat oil over medium heat. Add onions and cook for 5 minutes, stirring occasionally, until golden.Step 2
Add garlic, ginger and chicken and sauté for 5 minutes, or until the diced chicken is no longer pink in the middle. Stir in the allspice and a pinch of saffron or turmeric, if desired, rice and chicken broth. Bring to a boil.Step 3
Reduce heat to low, cover and simmer for 20 minutes. Remove from heat and stir in lime juice.Step 4
Transfer to a serving dish and garnish with cilantro.
