Step 1
Prepare Carolina® Jasmine Rice according to package directions.
Step 2
Peel and dice one avocado and one mango and set aside. In a large bowl, mash remaining avocado until smooth.
Step 3
Add cooked rice, chopped tomatoes, minced garlic, grated onion, fresh cilantro, jalapeño peppers, and lime juice. Mix all the ingredients until well blended.
Step 4
Fold in reserved mango and chopped avocado. Season with salt, if desired. Serve with tortilla chips scoops or your favorite chip.
