The refreshing salad is ideal for when you need something light but filling made with a premium blend of Carolina® Jasmine Rice with Red & Wild Rice with spinach greens, fruit, nuts and feta cheese.
Step 1
Cook rice according to package directions; let cool completely. Meanwhile, whisk together oil, vinegar, honey, mustard, garlic, salt and pepper.
Step 2
Toss rice, spinach, strawberries, basil, red onion, feta and pecans with the dressing until well coated.

Although it is naturally vegetarian, feel free to add on cooked rotisserie chicken, canned tuna, hard boiled eggs, crispy bacon bits or chickpeas for a bit of extra protein.
If you’re not a fan of feta cheese, simply swap out for goat cheese or mozzarella balls. Also, swap in nuts of choice such as slivered almonds, walnuts or toasted pine nuts.
Substitute blueberries or blackberries for strawberries.
