Strawberry Salad with Jasmine Rice

Ingredients

  • 1 package (8.8 oz) Carolina® Jasmine Rice
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 cups spinach
  • 2 cups strawberries, sliced
  • 1/2 cup fresh basil, torn
  • 1/2 small red onion, thinly sliced
  • 1/2 cup feta cheese, finely crumbled
  • 1/2 cup toasted pecans, chopped

Instructions

  • The refreshing salad is ideal for when you need something light but filling made with a premium blend of Carolina® Jasmine Rice with spinach greens, fruit, nuts and feta cheese.

    Step 1

  • Cook rice according to package directions; let cool completely. Meanwhile, whisk together oil, vinegar, honey, mustard, garlic, salt and pepper.

    Step 2

  • Toss rice, spinach, strawberries, basil, red onion, feta and pecans with the dressing until well coated.

This rice salad is the perfect lunch for a new meatless Monday recipe idea or a light dinner side dish. Or, you can even incorporate it into your weekly meal prep, simply prepare a large batch of our premium rice blend and toss it into salads like a Citrus, Kale and Wild Rice Salad or in a Crockpot Chicken with Broccoli and Rice.

Variations

Although it is naturally vegetarian, feel free to add on cooked rotisserie chicken, canned tuna, hard boiled eggs, crispy bacon bits or chickpeas for a bit of extra protein.

If you’re not a fan of feta cheese, simply swap out for goat cheese or mozzarella balls. Also, swap in nuts of choice such as slivered almonds, walnuts or toasted pine nuts.

Ingredient Substitutions

Substitute blueberries or blackberries for strawberries.
