This hearty meat and veggie risotto recipe is made with the very best Arborio Rice, specially crafted by Carolina®, for all of your favorite risotto dishes.
In a small saucepan, bring broth to boil; reduce heat to low to maintain heat.
Heat oil in a high-sided skillet set over medium heat; cook sausage meat for about 5 minutes or until lightly browned. Add cauliflower, onion, celery, garlic and sage; cook, stirring, for 3 to 5 minutes or until vegetables are slightly softened.
Add rice, salt, pepper and chili flakes; cook, stirring, for about 2 minutes or until rice is well coated. Add wine; cook, stirring constantly, for 2 to 3 minutes or until most of the liquid is absorbed.
Add broth, 1 cup at a time, stirring constantly, until all broth is absorbed and the rice is creamy and tender, about 20 minutes (if risotto is dry, add more broth or water).
Stir in half of the Parmesan, and parsley. Serve with remaining Parmesan.

To make sure that your risotto is nice and creamy without adding cream or butter, add the broth in gradually and stir often.

A few tips for making your risotto:
Wine – Add the wine after toasting your rice in the spices, meat and veggies when your pan is hot. Stir the wine and the rice together and let sit for enough time for the alcohol to cook off.
Broth – Make sure to add your broth in hot from the saucepan. Add in 1 cup at a time and let the rice soak that in, then add in another cup and so on until your rice has reached the desired consistency.
