This delicious plant-based power bowl is made with a hearty base of whole grain Carolina® Brown Rice topped with oven-roasted BBQ cauliflower and a homemade coleslaw!
Step 1
Preheat oven to 425°F. Cook brown rice according to package directions.
Step 2
Meanwhile, toss together barbecue sauce, oil and cauliflower. Arrange in single layer on parchment paper-lined baking sheet. Bake for 20 to 25 minutes or until tender and golden brown.
Step 3
Whisk together yogurt, lemon juice, honey, mustard, garlic, salt and pepper; toss with cabbage, celery and apple until well coated.
Step 4
Divide rice among 6 bowls. Top with roasted cauliflower and coleslaw. Garnish with green onions.
Drizzle extra barbecue sauce over bowls if preferred.

Although this dish is naturally vegetarian, if you want to switch things up or load up on the power protein, simply toss in beans of choice, marinated tofu or cooked chicken with the BBQ cauliflower and drizzle over sauce as desired.
