Cook organic rice according to package directions.
Meanwhile, toss together onion, vinegar, sugar, and 1/2 tsp each salt and pepper. Let stand for 15 to 20 minutes or until lightly pickled.
Mash together avocados, lime juice, garlic, cumin, cayenne, and remaining salt and pepper.
Fluff rice with fork. Fold in avocado mixture and cilantro.
Garnish with pickled red onions.
Substitute Carolina® Organic Brown Rice for white rice if preferred.
