Prepare the rice according to package directions.
Heat the oil in a medium size skillet over medium heat. Sauté shallots for 2 minutes. Add the chicken and sauté until no longer pink, about 5 minutes. Add peas, carrots, corn and parsley. Sauté for 1 minute. Fold the mixture into the prepared rice.
Traditional Spanish Saffron Rice is given its signature yellow color because of the tint that is released by the saffron when added with liquid and heat. The rice blend can be prepared using water or your choice of chicken or vegetable broth.
To save on cook time, use frozen peas and carrots with canned sweet corn. If using frozen vegetables, make sure that they are properly thawed beforehand or add a few minutes onto the cook time to let them heat through sufficiently.
As the rice is prepared ahead of time, use an instant pot or rice cooker to prepare the rice while you are preparing the other ingredients. Make this a meal prep idea by preparing ahead of time and bringing to work or school for a hearty lunch. Make sure to save some rice in the fridge to make an easy dish to prepare for a quick dinner.
