Cooked till golden brown, these spicy, smoky and delicious lettuce wraps are made using Carolina® Organic Brown Rice, a homemade Cajun seasoning blend and your favorite white-fleshed fish!
Step 1
Cook rice according to package directions, adding peas and corn in the last 5 minutes of cooking.
Step 2
Meanwhile, pat fish dry with paper towel. Stir together paprika, salt, pepper, cumin, onion powder, garlic powder, thyme, cayenne and brown sugar; rub all over fish.
Step 3
Heat oil in large cast-iron skillet set over medium-high heat; cook fish, in batches, for 3 to 5 minutes per side or until golden brown and fish just starts to flake when tested.
Step 4
Serve rice and fish in lettuce leaves. Serve with lemon wedges; sprinkle with parsley.
If you’ve never tried blackened fish or other ingredients, it doesn’t mean burning your ingredients. It’s a famous Cajun cooking technique that consists of pan-frying your fish in a blend of spices and butter or oil. Although this method is most often done with fish, it’s also possible to blacken chicken, steak or tofu.
The best pan to use for blackening is a cast iron skillet, however, if you don’t have one, you can also use a thick bottomed pan that can withstand higher temperatures. The blackening comes into play when the oil or butter heat and cook the fish and the seasonings provide loads of flavor!
As the fish takes only 3-5 minutes per side, make sure to have your rice cooked beforehand to enjoy warm, or use leftover rice from a previous meal to cut down on cook time.
