This creamy Prosciutto and Green Pea Risotto is ready in no time! Simply add your ingredients to the rice cooker and let it do the work for you.
Step 1
Add the Carolina® Organic White Rice, butter, onions, prosciutto, wine, and broth to the rice cooker and stir together.
Step 2
Cover and cook on the appropriate setting until the rice cooker shuts off. The process should take around 20 minutes to cook.
Step 3
Carefully remove cover allowing the steam to escape. Add cream, cheese, white pepper and peas. Stir gently. Serve topped with fresh basil.

Depending on the size of your rice cooker you may need to halve the ingredients as the rice will expand, but experiment with your device and see what works best for you regarding portion sizes and liquid measurements. As a rule of thumb, traditional risotto should always be a 3:1 ratio meaning 3 cups of liquid (broth, water, wine) to 1 cup of rice used. As this recipe uses 2 cups of broth and ½ cup of wine, you may or may not need to add in ½ cup of broth or water more depending on your rice cooker.
Once your rice cooker has turned off, make sure to check the consistency to see if the rice has cooked to the desired consistency. Most risottos are cooked but still have an al dente bite and chewiness.
Recipe tip: Substitute one-half cup of chopped or diced ham for the prosciutto. If you can’t find white pepper at your local grocery store, simply substitute with black pepper. The chicken broth can be substituted for vegetable broth, beef broth or water, as desired.
