Get ready for amazing aromas and flavors with this oven-baked feta coated in harissa and herbs all combined with creamy Greek yogurt and tomatoes for an incredible meal. Serve with toasted Carolina® Jasmine Rice to soak up all of the delicious sauce and a poached egg on top!
Step 1
Preheat oven to 375°F. Cook rice according to package directions. Spread cooked rice on parchment paper-lined baking sheet; let stand for at least 1 hour.
Step 2
Place grape tomatoes in a 13×9-inch baking dish. Sprinkle olive oil over tomatoes; set aside.
Step 3
In a small bowl, stir together butter, 1 tbsp dill, harissa and garlic; spread all over each block of feta cheese. Arrange feta in baking dish with tomatoes.
Step 4
Bake for 15 to 20 minutes or until feta is golden brown and fragrant, and tomatoes start to blister. Mash feta with fork and mix together with pan juices. Stir in yogurt.
Step 5
Heat vegetable oil in large high-sided skillet set over high heat. Carefully stir in rice; cook, stirring frequently, for 5 to 8 minutes or until rice is crispy.
Step 6
Divide jasmine rice among 6 bowls; spoon feta mixture over top. Arrange poached egg over each serving. Sprinkle with cracked peppercorns. Garnish with remaining dill.
Precooked leftover rice works great in this dish.
To poach eggs, fill saucepan with enough water to come 3 inches up side of pan; stir in 2 tbsp white vinegar. Bring to simmer over medium heat. Vigorously stir water to create a vortex.
Break cold egg into small dish or saucer. Holding dish just above simmering water, slip egg into the water. Reduce heat to medium-low. Cook each egg one at a time, in barely simmering water, for 3 to 4 minutes or until whites are set and yolks are cooked as desired. Remove eggs with slotted spoon; place on paper towel-lined plate.
To make the ultimate tomato-based sauce, we suggest you start with fresh ingredients like grape tomatoes instead of the canned variety, freshly chopped dill and minced garlic cloves. This will help to add over-the-top flavor along with the baked feta and spicy harissa paste!
