You can’t find this recipe at your local take out place! Personalize your favorite shrimp fried rice by adding in the delicious and savory taste of bacon. To really infuse this recipe with that great smoky bacon flavor, start by cooking the bacon first in your skillet or wok before beginning with the rice. Let the bacon cook and release all of that dripping goodness to use as a base for the vegetables. Once it has reached that crispy texture just how you like it, remove the bacon and set aside.
Saute the vegetables and shrimp in the bacon drippings and when they are just about cooked, add in the rice and cook all of the ingredients together.
Fried Rice recipes always work better with rice that has been cooked the day before and chilled completely. If you don’t have any on hand, simply make it ahead of time and toss it in the fridge to cool before tossing the rice in the skillet.
Should you use a skillet or a wok? Although both are fine for making fried rice, we suggest using a wok. A wok has a large cooking surface which helps to distribute the heat to all of the ingredients evenly. This works well for dishes like stir frys and fried rice dishes so that it cooks more evenly and in less time.
