This authentic Spanish Rice is a classic that continues to stand the test of time as an essential plate for any occasion. The beauty of this dish is that it is versatile enough to be used as a side dish, paired with meat or chicken and even used in a taco or burrito rice bowl.
An important part of making a great Spanish Rice dish is using the right ingredients. Jasmine Rice is a long grain rice that when cooked, releases very little starch and the grains stay separate making it less like Mexican Rice and more Spanish Rice.
Many confuse the two, but while both are cooked with tomato and broth, Mexican Rice is more compact in a risotto-like texture where Spanish Rice has separate granules perfect for adding into burritos and pairing with beans.

Although this dish is naturally vegan and vegetarian, you can top with shredded chicken, beef or pulled pork. But, if you want to keep it meat-free and add more protein, use lentils or garbanzo beans and tofu or another vegetarian meat as well as vegetable broth. This recipe can also use fresh or canned chopped tomatoes instead of tomato sauce. Just cook the tomatoes a little longer so that they can release their own water and add slightly more broth.
