Shrimp Fried Rice with Pineapple and Egg

  • Heat oil in large skillet or wok set over high heat; cook shrimp, green onions and garlic, stirring, for 1 to 2 minutes or until shrimp starts to curl. Stir in eggs; cook for about 1 minute or until soft curds just start to form.

  • Stir in rice, frozen veggies, pineapple, soy sauce, hot sauce and 3 tbsp water. Cook, stirring, for about 2 minutes or until well coated.

  • Reduce heat to medium; cover and cook for 2 to 3 minutes or until rice and veggies are heated through and shrimp are cooked. Sprinkle with peanuts before serving.


Recipe Tips

For a nut-free option, substitute toasted sesame seeds for peanuts.
