Step 1
Heat the oil in a large skillet or wok and set over high heat; cook the shrimp, green onions and garlic, stirring for 1 to 2 minutes or until shrimp starts to curl. Stir in the eggs; cook for about 1 minute or until soft curds start to form.
Step 2
Stir in the rice, frozen vegetables, pineapple, soy sauce, hot sauce and 3 tbsp water. Cook, stirring for about 2 minutes or until well coated.
Step 3
Reduce the heat to medium; cover and cook for 2 to 3 minutes or until rice and veggies are heated through and shrimp are cooked. Sprinkle with peanuts before serving.
