These tasty rice muffins are the perfect on-the-go snack or meal for you and your family to grab on your way out the door.
Preheat the oven to 400º F. Spray a 12-cup muffin tin pan with non-stick cooking spray or use cupcake liners.
In a medium bowl, beat butter, eggs, and sugar until smooth.
Stir in the rice, onions, and ½ cup nuts.
In another medium bowl, combine the flour, baking powder, and salt.
Stir the dry ingredients into the rice mixture just until incorporated. Do not overmix.
Fill prepared muffin tins two-thirds full with batter. Sprinkle remaining nuts on top. Bake 15-18 minutes or until the muffins are golden brown.
Let cool in the pan for two minutes then remove muffins and transfer to a rack to cool completely.
For nut allergies, simply omit the pecans
