This rich and creamy risotto dish, made with Carolina® Medium Grain Arborio Rice, is paired with traditional puttanesca sauce ingredients for a blend of Italian comfort flavors in one.
Step 1
Bring broth to boil in a saucepan set over high heat; reduce heat to low to maintain heat.
Step 2
Heat oil in large high-sided skillet set over medium heat; cook onion for 2 to 3 minutes or until slightly softened. Stir in olives, capers, anchovies, garlic and chili flakes; cook for 3 to 5 minutes or until fragrant. Stir in rice; cook for 2 to 3 minutes or until rice is well coated. Season with salt and pepper.
Step 3
Add wine; cook, stirring frequently, for 2 to 3 minutes or until most of the liquid is absorbed.
Step 4
Add broth to skillet, 1 cup at a time, stirring frequently after each addition until all of the broth is absorbed before adding the next cup of broth, for 20 to 30 minutes or until rice is very tender.
Step 5
Stir in Parmesan and basil. If risotto is too dry, stir in more broth or some water. Serve immediately.
Most commonly used as a sauce for pasta, puttanesca sauce recipes include olive oil, olives, garlic, red chili flakes, capers, anchovies and tomatoes. However, we’ve omitted the tomatoes for this recipe as the unique Arborio Rice from Carolina® Rice in combination with the broth offer a rich and creamy texture loaded with umami flavors from the capers and olives.
