  • Cook Jasmine with Quinoa according to package directions; let cool completely.

  • In food processor, pulse dates, 1/2 cup coconut, and hazelnuts until finely ground. Toast remaining coconut in small pan set over medium-high heat; let cool completely.

  • Stir together Jasmine with Quinoa, date mixture, coconut oil, chocolate chips, hazelnut butter, cocoa powder, flax seeds and salt until well combined

  • Roll 2 tablespoonfuls of mixture into ball; repeat with remaining mixture. Roll balls in toasted coconut. Transfer to parchment paper lined tray. Refrigerate for about 30 minutes or until firm (can be refrigerated for up to 3 days)


Recipe Tips

Energy bites can also be rolled in cocoa powder or chopped hazelnuts.
