With a wide variety of options, there are many types of rice to choose from. Carolina® Medium Grain White Rice is shorter and wider than regular Carolina® Long Grain White Rice and contains more starch, so the grains become soft and slightly chewy and form a more compact texture.
Whereas long grain rice is looser and works better for salads or rice pilaf, medium grain rice is perfect for all of the recipes you want to be more compact and absorb lots of flavor.

The ideal ratio of rice to water for this variety is 2:1, meaning two cups of water for every 1 cup of rice. You can cook this rice over the stove, in the microwave or using a rice cooker or Instant pot.
To cook over the stove: Bring 2 cups of water to a boil in a 2 quart heavy saucepan. Add olive oil and salt, if desired. Stir in 1 cup rice, cover, reduce heat and simmer for 20 minutes or until all water is absorbed.
To cook in the microwave: In a 2 quart microwave safe dish combine 2 cups water and 1 cup rice. Add olive oil and salt, if desired. Cover and microwave on HIGH for 5 minutes. Reduce setting to 50% power, microwave for 15 minutes or until all the water is absorbed.
NOTE: We recommended only preparing 1 cup rice at a time in the microwave. Microwave ovens vary, so these cooking times are approximate.

Main Dish: The medium grains make this rice great for naturally more compact dishes like Italian risotto or Spanish paella. However, it also works perfectly in rice bowls, oven-baked casseroles and as a filling for tacos, burritos or stuffed peppers.
Dessert: Of course, we didn’t forget about a rich and creamy dessert like rice pudding, rice hot cakes with chocolate or something more international like a rice atole or a homemade horchata drink.
