Step 1
Melt the butter in a large skillet over medium heat., then add the onion and garlic and fry until they are soft and translucent.

Add the shrimp and season with a pinch of salt and black pepper. Cook for 3–4 minutes, or until the shrimp turn pink.

Add the coconut milk and lime juice. Stir well and simmer for 2–3 more minutes, until the sauce slightly thickens.
Step 4
Heat Carolina® Ready to Heat Long Grain White Rice according to package instructions.
Step 5
Serve the hot rice in bowls and top with the coconut lime shrimp and sauce. Garnish with fresh cilantro and peperoncino before serving.
