Step 1
Cook rice according to package instructions and set aside to cool.

Rinse cooked chickpeas and strain well.

Season the chickpeas with olive oil, cumin, paprika, pepper, salt and pepper in a large bowl.

Once fully coated, place on a baking tray with baking paper.

Bake for approximately 35 minutes at 356° until chickpeas are golden brown and crispy.
Step 6
Grate the carrot finely. Chop almonds, raisins, cranberries, parsley and mint, and mix all the ingredients together in a bowl.
Step 7
Garnish with grated orange peel and sprinkle with mint leaves.
